Ingredients: (makes 8 )
- 1/2 cup Blueberries (fresh or frozen)
- 1/2 cup All purpose flour
- 1/4 cup light Brown Sugar
- A pinch of salt
- 2 Tbsp Cinnamon powder
- 1 Tbsp Baking powder
- 3 Tbsp Vegetalbe oil
- 3/4 cup Milk
- 1 Egg
Method:
In a bowl add all the ingredients except blueberries. Beat the mixture together until smooth. Add blueberries and fold with a spoon/ wooden spatula.
Grease the baking molds with butter. Fill the mold with barter about 2/3 full. Bake at 35 F at 25-30 minutes or skewer inserted in the centre of the muffin and comes out clean.
Let it cool for 8-10 minutes or so. Unmold the muffins and let them cool completely.
Note: I like nuts any kind of nuts. So i always use them. If you don’t like then omit this step.
