Ingredients: (makes 3-4)
- 1/2 cup All purpose flour
- 1/2 cup Sugar
- 1/4 cup Butter (room temperature)
- 1 tsp Lemon zest grated
- 2 tsp Baking powder
- 2 tsp Lemon juice
- 1 Egg
- 1/4 cup Milk
- 1/4 tsp Salt.
Method:
Beat the egg yolks.
In another bowl, with an electric mixer, cream the butter, sugar until the fluffy. Add egg yolks, lemon zest, lemon juice and bet everything together.
In another bowl , sift flour, baking powder ,salt and mix it well. Add this flour mixture to egg mixture. Add the flour in baches so that there will be no lumps.
Grase the baking molds with butter. Pour this mixture to the baking molds.
Bake at 350 F for 25-30 minutes.
Let it cool for 5-10 minutes before turning out on the rack to cool completely. Once the they are cool.
Decorate with icing and lemon zest.
