Blueberry and Cinnamon Muffins

Ingredients: (makes 8 )

  • 1/2 cup Blueberries (fresh or frozen)
  • 1/2 cup All purpose flour
  • 1/4 cup light Brown Sugar
  • A pinch of salt
  • 2 Tbsp Cinnamon powder
  • 1 Tbsp Baking powder
  • 3 Tbsp Vegetalbe oil
  • 3/4 cup Milk
  • 1 Egg

Method:

In a bowl add all the ingredients except blueberries. Beat the mixture together  until smooth. Add blueberries and fold with a spoon/ wooden spatula.

Grease the baking molds with butter. Fill the mold with barter about 2/3 full.  Bake at 35 F at 25-30 minutes or skewer inserted in the centre of the muffin and comes out clean.

Let it cool for 8-10 minutes or so. Unmold the muffins and let them cool completely.

Note: I like nuts any kind of nuts. So i always use them. If you don’t like then omit this step.

Chocolate chip Muffins

Ingredients: (makes 8-10)

  • 2 cups All purpose flour
  • 3/4 cup Chocolate chip
  • 1/2 cup Butter
  • 1/2 cup Sugar
  • 1/8 cup Dark Brown Sugar
  • 1/2 Milk
  • 2 Eggs, (room temperature)
  • 1 tsp Baking powder
  • 1 tsp Cinnamon powder
  • Walnuts (optional)

Method:

In a bowl, add butter and beat until soft. Add sugar and beat until light and fluffy. Add eggs and beat everything at 1 at a time.

In other bowl sift the flour, baking powder, cinnamon powder and mix it well. add this flour mix into egg mixture in batches. Add milk  while mixing everything.

Take the baking mold grease with putter or use paper cases. Divide half the mixture between the muffin molds. Sprinkle some chocolate chips on the top, then cover with spoonful of the barter. Sprinkle some more chocolate chips and walnut chunks on the top of the barter.

Bake at 375 F about 20-25 minutes. Let it cool for 5-8 minutes then turn out.

Lemon cup cake

Ingredients: (makes 3-4)

  • 1/2 cup All purpose flour
  • 1/2 cup Sugar
  • 1/4 cup Butter (room temperature)
  • 1 tsp Lemon zest grated
  • 2 tsp Baking powder
  • 2 tsp Lemon juice
  • 1 Egg
  • 1/4 cup Milk
  • 1/4 tsp Salt.

Method:

Beat the egg yolks.

In another bowl, with an electric mixer, cream the butter, sugar until the fluffy. Add egg yolks, lemon zest, lemon juice  and bet everything together.

In another bowl , sift flour, baking powder ,salt and mix it well. Add this flour mixture to egg mixture. Add the flour in baches so that there will be no lumps.

Grase the baking molds with butter. Pour this mixture to the baking molds.

Bake at 350 F for 25-30 minutes.

Let it cool for 5-10 minutes before turning out on the rack to cool completely. Once the they are cool.

Decorate with icing and lemon  zest.
