Ingredients:
- 2 cups All purpose flour
- 2 cups Sugar
- 4 Eggs
- 1 and Vegetable Oil
- 4 Carrots (greated)
- 1 and 1/2 tsp Baking soda
- 1 and 1/2 tsp Baking powder
- 1 tsp Cinnamon powder
- 1/2 tsp Nut meg (optional)
For icing
- 1 cups Suagr (powdered)
- 2 cups Cream cheese
- 1/2 cup Butter (unsalted)
- 1 tsp Vanilla essence
- 1/2 cup Walnuts or pecans.
Method:
In a bowl, add carrots, eggs, vegetable oil, sugar and beat for 2 minutes or so.
In another bowl add flour, baking powder, baking soda, cinnamon powder, nut meg powder and mix it well.
Add the flour into carrot mixture, in 3-4 equal batches. Mix well every time. So there will be no lumps.
Pour the mixture to the greased baking round tin.
Bake at 375 F for 35-40 minutes. Bake until a skewer inserted in the centre of the cake comes out clean.
Let it cool completely.
For Icing of the cake:-
Combine everything except nuts. Beat until the smooth.
To assemble everything, set one cake layer and spread the icing and place the another cake on the top. Spread the remaining icing all over and side of the cake.
Sprinkle the nuts at the side or over the top.
Also add some food coclor and decore on the cake.
